350 g of pici
1 handful of green beans
½ small cabbage
1 clove of garlic
evo oil for the sauce teriaki
half a cup of soy sauce
2 tablespoons mirin (or alternatively, sake and sugar)
1 tablespoon sugar
1 tablespoon of olive oil
1. Blanch the shrimp for two minutes in salted water and fry in pan with the garlic and four tablespoons of oil.
2. Wash and cut the vegetables finely and add to the shrimp, continuing to cook for another two minutes. Season with salt, do not overdo it (you add a sauce that has a very strong flavor).
3. Prepare the Teriaki sauce: pour the soy sauce, sugar, oil and mirin in a small saucepan and bring to a boil stirring constantly. When the sugar has completely dissolved, the sauce is ready.
4. Cook the Pici pasta in salted water (follow the instructions on the carton box of your pasta but it will take at least 20 minutes!), drain and sauté in a pan along with shrimp, vegetables and sauce.
