The Balsamic Vinegar of Modena is made from the typical Lambrusco and Trebbiano grapes of Modena.
A great companion to use everyday to dress mixed salads, raw or cooked vegetables, to marinate meat and seafood, to make sauces, gravies, vinaigrettes, bread dipping. It’s a Protected Geographical Indication.
Balsamic Vinegar of Modena, as established by the Regulation approved by the Ministry of Agriculture and Forestry policies and the EU, can be defined PGI when it matures for at least 60 days in tanks or in barrels, while it can claim the name “Aged” when the aging lasts for over 3 years in fine wood barrels.
From the label can be recognized if the product is PGI or aged PGI: the Regulation does not allow to put on the labels terms that may confuse the consumer, then numbers or adjectives are neither authorized nor permitted.
In the case of Balsamic Vinegar of Modena PGI, the term Protected Geographical Indication or the acronym PGI must always be present on the product label. The term AGED is allowed only after verification and approval of the Balsamic Vinegar of Modena made by a special certification body that verifies the actual aging.
