Mostarda from Mantova

Typical of the Mantuan countryside, mostarda was originally a way of preserving fruit and vegetables during the winter months.
It has always traditionally accompanied dishes such as boiled meats and roasts but it is also excellent with mature or strongly flavoured cheeses and cold cuts. It is made with fine slices of candied fruit or vegetable, which are then immersed in a thick sweet syrup flavoured with mustard oil to make the result hot and spicy.
