Stracchino is a soft cheese with a very short ageing period. The etymology of the name dates back to the use of milk from “tired” cows (called “stracche”), recently returned to the plains from their summer pastures in the mountains.
Ingredients used: pasteurised milk, cream, lactic ferments, salt, rennet.
