Before the break for holiday, yesterday night Gusti d’Italia and Le Strade del Vino, in Prague, have organized a wine and pasta party.
We have propose three different type of pasta:
- Creste di Gallo at 5 flavours
- Bronze drawn Calamari
- Black squid ink Penne
We have paired the pasta with two different sauce: arrabbiata sauce – it will go well with any plain pasta, and it is often best enjoyed with penne – and riviera sauce – ripe tomatoes, fresh Ligurian basil and a selection of aromatic herbs.
Our many guests have really appreciated our pasta!
At the end of the event, we have tasted new particular wines produced in Piemonte by Cascina Zoina, one of the winery Gusti d’Italia cooperates.
The first one is Nebbiolo Rosè Nubie 2010, a wine making a soft pressing and fermentation in stainless steel tanks at controlled temperature of 13°, and then four months on yeasts, in stainless steel tanks with four daily batonnage.
But the great surprise always is Esther, made with Erbaluce grape, a wine in “french style”: soft pressing, cold maceration (4°) for 12 hours and fermentation in new barrels, 50% oak and 50% acacia at controlled temperature of 19°, malolactic fermentation in barrel. A wine with a potential aging of 10 years!
