Raw ham

The cured ham, in Italian Prosciutto crudo, is one the most famous Italian charcuterie. 
It is a matured product made from selected pork legs, coming from pigs having weights ranging from 160 and 180 kg.

— Addobbo: boneless and tied tightly.

— Mattonate comes from mattone (means brick in Italian language): the adjective is due to the shape.
